Paleo Wrapped Eggs & Veggies

Ingredients:
This recipe could be modified to include a handful of your favourite protein - cooked shredded chicken, bacon, chopped ham, chorizo, and/or some fetta - delicious!
Serves: 1
Prep Time: 2 minutes
Cook Time: 6 minutes

Ingredients:
- 2 eggs
- 1 tbsp coconut oil
- 1 tbsp chopped parsley
- ¼ cup mushrooms
- 1 spring onion, sliced
- Herbs, spices, salt and pepper to taste
- 1 x Paleo Wrap
- 2 tbsp sour cream/creme fraiche (optional)
- Warm pan and add coconut oil
- Cook eggs to your liking, adding veggies ½ way through
- Season with your choice of herbs/spices/salt/pepper
- Serve in a Paleo Wrap or two
- Top with sour cream/creme fraiche (optional)
